To Mangoe Cucumbers

Aus: Mrs. Eales Compleat Confectioner (1718-1742), Teil 2, S. 034

Originalrezept:

Cut a Slip out of the Side of the Cucumbers, and take out the Seeds, but as little of the Meat as you can; then put in Mustard Seed bruised, a Clove of Garlick, some Slices of Ginger, and some Bits of Horse Radish; tie the Piece in again, and make a Pickle of Vinegar, Salt, whole Pepper, Cloves, and Mace; boil it and pour it to the Mangoes. Do thus for nine Days together, and when cold cover them with Leather.
